Εάν ρωτήσει κανείς τον Ηλία, θα σου πεί ότι εμείς δεν τρώμε ψωμί. Αν ρωτήσεις εμένα, τότε η απάντηση θα είναι διαφορετική. Η αλήθεια είναι ότι μας αρέσει πολύ το ψωμί, ειδικά το καλό ψωμί. Που και που ζυμώνω το δικό μου ψωμάκι αλλά γενικά αγοράζουμε από το φούρνο της γειτονιάς. Τελευταία, έχω αγαπήσει πολύ τη φοκάτσια και την φτιάχνω αρκετά συχνά. Η φοκάτσια είναι ένα νόστιμο, απλό, αφράτο και μυρωδάτο ιταλικό ψωμί, το οποίο θα μπορούσε να είναι και η μαμά της πίτσας. 

Εάν αγαπάτε το ψωμάκι, θα την λατρέψετε τη σημερινή συνταγή. Πεντανόστιμο, αφράτο ψωμάκι με δενδρολίβανο, ελαιόλαδο και νιφάδες αλατιού. Όταν είναι ζεστό είναι το κάτι άλλο αλλά και κρύο είναι εξίσου πεντανόστιμο. Μπορεί να αποτελέσει τη βάση για νοστιμότατα σάντουιτς. Το καλύτερο απ' όλα είναι ότι η συγκεκριμένη συνταγή είναι πολύ απλή και εύκολη και δεν απαιτεί ιδιαίτερες μαγειρικές ικανότητες.

ΦΟΚΑΤΣΙΑ ΜΕ ΔΕΝΔΡΟΛΙΒΑΝΟ
8-12 Άτομα
Προετοιμασία: 1 ώρα + 15 λεπτά - Ψήσιμο: 20 λεπτά

ΥΛΙΚΑ
1 1/3 φλ. ζεστό νερό 
2 κ.γλ. ζάχαρη
1 φακελάκι ξηρή μαγιά
3 1/2 φλ. αλεύρι για όλες τις χρήσεις 
1/4 φλ. έξτρα παρθένο ελαιόλαδο & επιπλέον για το πασπάλισμα 
2 κ.γλ. χοντρό αλάτι & επιπλέον για το πασπάλισμα 
2 κλωναράκια φρέσκο δενδρολίβανο 

ΕΚΤΕΛΕΣΗ
Στο μπόλ του μίξερ, προσθέστε το ζεστό νερό και τη ζάχαρη και ανακατέψτε ελαφρά να ομογενοποιηθούν. Ρίξτε τη μαγιά στην επιφάνεια του νερού και ανακατέψτε ελαφρά. Αφήστε το μείγμα στην άκρη για 5-10 λεπτά, μέχρι να αρχίσει να δημιουργείτε αφρός. 
Βάλτε το μίξερ στην χαμηλή ταχύτητα, προσθέστε σταδιακά το αλεύρι, το ελαιόλαδο και το αλάτι και ανακατέψτε. Σταδιακά αυξήστε την ταχύτητα στο μέτριο και ζυμώστε για 5 λεπτά (εάν η ζύμη κολλάει και δεν ξεκολλά από τα τοιχώματα, προσθέστε επιπλέον 1/4 φλ. αλεύρι).
Αποσύρετε τη ζύμη από το μπολ και φτιάξτε μια μπάλα. Λαδώστε ελαφρά το μπολ με ελαιόλαδο και βάλτε τη μπάλα της ζύμης, σκεπάστε με νωπή πετσέτα και αφήστε το σε ζεστό μέρος για 45-60 λεπτά, να φουσκώσει και να διπλασιαστεί σε μέγεθος. 
Προθερμάνετε το φούρνο στους 200°C. Βάλτε τη ζύμη σε αλευρωμένη επιφάνεια και με τον πλάστη ανοίξτε την σε στρογγυλό ή ορθογώνιο σχήμα πάχους περίπου 2 εκ.*. Σκεπάστε με λαδωμένη διάφανη μεμβράνη και αφήστε τη ζύμη να φουσκώσει για άλλα 20 λεπτά. 
Αφαιρέστε τη μεμβράνη και μεταφέρετε τη ζύμη σε ένα ταψί ή τη λαμαρίνα του φούρνου. Με τα δάκτυλά σας πιέστε όλη την επιφάνεια της ζύμης (πιέστε δυνατά μέχρι τον πάτο του ταψιού). Ρίξτε περίπου 1-2 κ.σ. ελαιόλαδο στην επιφάνεια του ψωμιού και πασπαλίστε με δενδρολίβανο και χοντρό αλάτι. 
Ψηστε για περίπου 20 λεπτά, μέχρι το ψωμί να ροδίσει. Αποσύρετε από το φούρνο και πασπαλίστε με λίγο ελαιόλαδο ακόμη. Κόψτε και κομμάτια και απολαύστε τη ζεστή. 

Σημ.
*Τα γούστα του καθενός σχετικά με το πάχος του ψωμιού διαφέρουν. Προσωπικά μου αρέσει το ψωμί να είναι λιγάκι χοντρούτσικο, εάν εσείς το προτιμάτε πιο λεπτό, μπορείτε να το ανοίξετε σε μικρότερο πάχος. Υπολογίστε ότι κατά τη διάρκεια του ψησίματος θα φουσκώσει αλλά προσαρμόστε τον χρόνο ψησίματος ανάλογα, για να μην στεγνώσει και γίνει πολύ σκληρό.



If you ask my hubby, he will probably say that we don't generally eat bread in our house. If you ask me ... well, I'll give you a different answer. Truth is that all of us love eating bread, especially when delicious bread is around. I try to bake my own bread from time to time but generally, we buy from the local bakery. Lately, I'm in love with focaccia bread and I've been making this recipe on rotation. 

Let’s be real, who doesn't love any bread that is served warm and fresh right out of the oven? But this delicious focaccia bread is something else. It's full of flavor with all these fresh rosemary, extra drizzles of olive oil and flaked sea salt. It tastes amazing when it's warm but it's also delicious when it's cold too. I made some mini sandwiches the other day and taste amazing. Do you want to know the best part? It’s so easy to make!

ROSEMARY FOCACCIA BREAD
8-12 Servings
Preparation: 1 hour + 15 minutes Baking: 20 minutes

INGREDIENTS
1 1/3 cup warm water 
2 tsp sugar
1 package active dry yeast
3 1/2 cups all purpose flour
1/4 cup extra virgin olive oil, plus more for drizzling
2 tsp flaked sea salt
2 sprigs fresh rosemary
flaked sea salt for sprinkling

DIRECTIONS
Add warm water and sugar to the bowl of a stand mixer with the dough attachment, and stir to combine. Sprinkle the yeast on top of the water. Give the yeast a quick stir to mix it in with the water.  Then let it sit for 5-10 minute until the yeast is foamy.
Turn the mixer onto low speed and add gradually flour, olive oil and salt. Increase speed to medium-low, and continue mixing the dough for 5 minutes. (If the dough is too sticky and isn’t pulling away from the sides of the bowl, add in an extra 1/4 cup flour while it is mixing.)
Remove dough from the mixing bowl, and use your hands to shape it into a ball. Grease the mixing bowl (or a separate bowl) with olive oil, then place the dough ball back in the bowl and cover it with a damp towel. Place in a warm location and let it rise for 45-60 minutes or until the dough has nearly doubled in size.
Preheat oven to 200°C. Turn the dough onto a floured surface and roll it out into a large circle or rectangle until that the dough is about 2 cm thick*. Cover the dough with a greased piece of plastic wrap and let the dough continue to rise for another 20 minutes.
Remove the plastic wrap and transfer the dough to a large baking sheet. Use your fingers to poke deep dents (poke all the way down to the baking sheet) all over the surface of the dough. Then drizzle a tablespoon or two of olive oil evenly all over the top of the dough and sprinkle evenly with the fresh rosemary needles and sea salt.
Bake for 20 minutes, or until the dough is slightly golden and cooked through. Remove from the oven, and drizzle with a little more olive oil if desired. Slice and serve warm.

Just a note
*Different people have different preferences on the thickness of their focaccia. I like it thick but if you want yours thinner, just roll it out a little more. It will rise up considerably while baking.
